if you’re anything like me, after watching The Truman Show, you thought twice about everything you did–even in private–just in case you were secretly being filmed as part of a twisted reality series. Aaand if you’re anything like me, this paranoia lasted far longer than it should have. There are still some days that I wish my life was more like a sitcom- I’d have a theme song that would get stuck in your head for days, an adoring live studio-audience and best of all, my witty one-liners would not only be heard and appreciated, but broadcast nation-wide.

For example, the other night at work I sat a table of 6 elderly people, and as they wandered around and debating who would sit where, one of the women in the group made the comment “why doesn’t Barry sit in the corner?” I couldn’t pass up such an amazing opportunity, so with all the seriousness that I could muster I said “With all due respect ma’am… NOBODY puts Barry in a corner!” As I sauntered proudly away, I greatly enjoyed the laugh track playing in my head.

This post has nothing to do with the salad, I can’t even draw a tenuous connection. I just really wanted to share that story.

Lemon Poppy Seed Dressing Recipe

Servings: 3-4

Ingredients:

2 Tbsp White Sugar

2 Tbsp Lemon Juice (fresh squeezed, please)

1 tsp Lemon Zest

1/2 tsp Shallot, diced

1/4 tsp Dijon Mustard

1/4 cup Olive Oil

3/4 tsp Poppy Seeds

*Because this dressing is a little sweet, a little savory, it goes with a ton of things. I poured it over some melon balls and toasted almonds but it would also be amazing with a spinach salad etc.

1. In a food processor or blender, add all the dressing ingredients except the olive oil and poppy seeds and blend until fairly smooth. While the blades are going, slowly add the olive oil until it’s all nice and creamy and emulsified. At this point you can taste it and adjust to your taste– add more shallot, more lemon, more sugar etc. Transfer to a bowl or small pitcher and stir in the poppy seeds by hand. Super easy!

2. To serve it the way that I did, in a small skillet heat about 1/4 cup sliced almonds over medium-high until they start to become golden brown but DON’T burn. It takes a little while to get them the color you want, but be careful because once they start to brown they color fairly quickly. When they reach the desired color and begin to smell nice and nutty, transfer immediately to another bowl so they don’t continue to cook.

3. Use a melon baller (or just cube it) to scoop out about half of a honeydew and half of a cantaloupe. It would also be delicious with watermelon and just about any other fresh fruit (raspberries, strawberries, blueberries etcetera). In a bowl, toss the melon with the dressing and top with the toasted almonds.
