Like the classic apple butter… but with peaches. Perfect for summer! Because this is a recipe done in a slow cooker, you should make it on a day that you can spend your time around the house.
*Note: As my dad pointed out, this recipe doesn’t make a ton… pretty much enough for me and my roommate, but if you want more it can be very easily doubled or tripled!
Ingredients:
2.5-3 lbs Fresh Peaches (it’s about 6 or 7 peaches), skinned and cubed
1 cup Sugar
1/4 cup Honey
1/2 tsp Cinnamon
1/8 tsp Nutmeg
1/8 tsp Ground Cloves
2 tbsp Fresh Lemon Juice

1. After the peaches have been peeled and chopped, throw them in a blender (if you want a very smooth consistency) or mash them with a fork in a large bowl as I did (for a chunkier consistency). Add the spices, lemon juice, sugar and honey and mix it all together very thoroughly.
2. Throw the whole mixture into your slow cooker and set on low. Cook for 6-8 hours, stirring about every 30 minutes so that it doesn’t burn around the edges.
3. Divide into mason jars and do water bath canning if you wish… here’s a youtube link on canning technique
