“Ask not what you can do for your country. Ask what’s for lunch.”
_ _ My boyfriend usually turns up his nose at any salad topping that isn’t bleu cheese, ranch, or poppyseed. He hates vinegar. He hates garlic… Yet last night he requested salad with his dinner so that he could have more of this garlicky, vinegary dressing. Who knew making your own delicious “house dressing” could be so easy? I did. That’s why I made it.
2 tbsp Balsamic Vinegar
1 tbsp Cider Vinegar
1 tsp Dijon Mustard
1 clove Garlic, smashed (1 small clove, or half of a large clove)
1/8 tsp Dried Basil
Salt and pepper to taste
3/4 cup Olive Oil
1. In a food processor blend everything except the oil until relatively smooth.
2. While the blender is running, slowly add the olive oil until it’s totally combined and thickened.
Serve with mixed greens
