Penne with Sun Dried Tomato Dressing, Mozzarella, Tomatoes and Basil
Hi, my name is Anna and I’m an addict… for anything and everything sun dried tomato. I truly am a fiend for this pasta salad and you will be too. See you at the meetings!
1/2 cup Olive Oil
2/3 cup Oil-Packed Sun Dried Tomatoes, drained
1/3 cup Red Wine Vinegar (I don’t have red wine vinegar so I used half apple cider vinegar and half balsamic)
1 tbsp Capers, drained
1/2 clove Garlic, minced
1 cup Fresh Basil, sliced/julienned
4 oz Fresh Mozzarella, cubed
12 oz Cherry Tomatoes, halved
1 lb Penne Pasta
1. Blend the first 5 ingredients in a food processor until fairly smooth (doesn’t have to be perfect). Set dressing aside.
2. Cook pasta in salted water.
3. Add dressing to the cooked pasta and toss to coat. Refrigerate until chilled.
4. Before serving, stir in the fresh basil, tomatoes and mozzarella.
